Tilapia Is Yummy!


Good Morning and Happy Friday! It's Been A Great Week and I'm Stoked For An Awesome Weekend!  Today I Want To Drop A Little Recipe On Ya!!!


Grilled Tilapia w/ Vegetable Infused Quinoa and Asparagus


What You Will Need: (2 Servings)

6-8 Oz Tilapia Filet
1 Cup Qunioa
Asparagus
Baby Spinach
1 Stock Kale
3 Small Sweet Peppers
1/2 Jalapeno
Olive Oil
Salt
Pepper
Stock/Water




Directions:

1. Turn Grill on Medium Heat

2. Bring Stock/Water to Boil, Add Quinoa, Reduce to Medium Heat, Cover, Cook For 15-20 Mins
3. Put Peppers,  Jalapeno, Kale, into Food Processor, Etc.  Blend Until Paste
4. When Most of The Stock is Gone, and Qunioa is Nearly Done, Add 3/4 of Vegetable Blend and Handful of Baby Spinach.  Let Qunioa Simmer for 5 Minutes to Let Flavors From Veggie Mix to Infuse and Cook Into Quinoa.

While Quinoa is Cooking....

1. Season the Fillet w/ Small Dab of Olive Oil, Salt, Pepper, and Remaining Veggie Blend.
2. Cut Bottoms of Asparagus, Coat with Dab of Olive Oil, Salt & Pepper To Taste
3. Place Asparagus in Middle of Grill - 8-10 Mins, Rotating Half Way.
4. Place Fish on Mid-Lower Section of Grill - Cook 3-4 Mins/ Side.
