Yummy Healthy Tacos Recipe



TGIF TGL'rs....Happy Friday Everyone!  Today I thought I would share a delicious recipe for some super healthy and absolutely delicious tacos!!!

What You Will Need: (Serves 2 Adults)


  1. 1/4 of Red Bell Pepper & 1/4 of Green Bell Pepper 
  2. 3 Cloves of Fresh Garlic
  3. 1 Kale Lief w/ Stock
  4. Handful of "Spring Mix" Greens
  5. 6 Asparagus
  6. 6 Oz Chicken Breast
  7. Spices: Cayenne Pepper, Garlic Salt, Cracked Pepper (All To Taste)
  8. 2-4 Corn Tortillas
  9. 1/8 Cup Shredded Cheese
  10. 1-Cup of Quinoa
  11. 1 1/3 Cup Chicken Stock
  12. 1/4 Cup Black Beans
  13. Salsa
  14. Dab of Olive Oil


Instructions:

  1. 1. Qunioa
    1. Bring 1 1/3 Cup of Chicken Stock to Boil
    2. Add 1 Cup of Quinoa (Rinse Quinoa in Cold Water Prior)
    3. Cover and Reduce to Medium Heat - Cook Until Liquid is Soaked Up and Quinoa is Open and Soft, but not Mushy.
  2. Vegetable Pure For Infusion in Quinoa
    1. Add Bell Peppers, Kale, Garlic, and Mix Greens into Blender/Food Processor/Magic Bullet - Blend Until it Becomes a Puree.
  3. Once Quinoa is Done, Mix in the Puree & Black Beans
  4. Chicken
    1. Place Chicken Breast Between 2 Pieces of Plastic Wrap.  Flatten Chicken Slightly.
    2. Season with Cayenne, Black Pepper, and Garlic Salt to Taste
    3. Pre-Heat Grill to Medium Heat - Cook Chicken for 3-5 Mins/ Side (Until Cooked Through)
    4. Cut Chicken into Strips, Chunks, or Shredded
  5. Asparagus
    1. Wash, Cut Off Bottoms, Cover in Very Little Olive Oil and Garlic Salt and Cracked Pepper
    2. Place on Grill w/ Chicken, Turn Over when Turn Chicken
  6. Corn Tortillas
    1. Toast Corn Tortillas in Toaster Oven, Or Heat Up on Skillet on Stove
  7. Tacos
    1. 1 or 2 Corn Tortillas
    2. Top w/ 1 Scoop Quinoa
    3. 2 or 3 Pieces of Chicken
    4. Pinch of Cheese
    5. Spring Mix
    6. Salsa
  8. Asparagus Served on The Side
